Food, rhythm, agricultural cycles. The texture of life on a working estate, set by the land rather than the calendar.

Most things at San Vincenzo happen at our table

The harvest finishes at the table. The week ends there. Decisions get talked through there. The table is the centre of the estate the way the kitchen has always been the centre of a serious farm.

 

What is on the table is what is on the estate. Vegetables from the garden, oil from the press, wine from the cellar, grain from the mill, truffle in its short season. Cooking is unfussy. The point is that the cycle is visible.

In the warm months, by long custom, the estate gathers at five. A glass, a board, a half-hour of unhurried conversation, then back to the day or onward to dinner. It is the most consistent ritual on the estate, and the simplest one. Owners are welcome at the table. So are their guests, in the way that matters at a working estate: introduced, included, taken seriously.

Fresh Breads & Pasta

Olive Oil 

Grains; emmer, einkorn, durum — chosen for the soil, the climate, and the table. Milled small-batch in our own mill, Most of it goes to the kitchen, for bread and pasta. Surplus is offered with the rest of the harvest.

Single-estate, single-pressing, cold-extracted. Milled within hours of harvest and bottled in 500 ml dark glass. Production is set by the grove, not by demand. The oil is offered first to the table, then to the circle around the estate, then to a small list of partners.

Wines

A working cantina. Varieties chosen for the site rather than for fashion. The vineyard is sized to make a small number of bottles well rather than a large number that need to be moved. Wine is allocated to the estate table and to a small circle first, with a modest portion released to a few trusted partners. Tasting notes, vintages, and the current allocation are available upon request.

White Truffles

White truffle, in season, hosted by experienced trifolau working with their own dogs. The estate sits inside a recognised truffle district. The yield is the most variable of the four programs — that is the nature of truffle. In a year of plenty, it is offered to the table and to the circle. In a thin year, it is reserved for the table.
